Make Sourdough Bread (Kit program)

with Sharon Bobbins

Wednesday, September 29 at 7 p.m.

Register at www.eastmeadow.info or call us at 794-2570 ask for Programming. We will then email the ZOOM link to you on the morning of the program. Kits are limited.

Sharon Bobbins is an East Meadow resident who decided to use the past year wisely and become an extraordinary sourdough bread baker. Sourdough is considered an artisanal bread, has a wonderful sour taste, is all natural, and doesn't contain preservatives. It's rewarding to make because unlike yeast breads, it relies on natural sourdough starter for leavening. This workshop will explain all the steps involved and have us creating delicious sourdough breads! Over the course of several days, you’ll bring your dehydrated starter back to life and learn how to use it to make tangy, moist, rustic loaves of sourdough.

Kits may be picked up at the Library between September 15 and 22.

Finally, an allergy disclaimer-the kits contains flour and the supplied starter is prepared in a kitchen that is NOT nut-free.

Sourdough Bread Baking withThe East Meadow Public Library

Sourdough bread has a wonderful sour taste. It can be a challenge to make because unlike yeast breads, it relies on natural sourdough starter for leavening. A sourdough starter is a culture of wild strains of yeast and Lactic Acid Bacteria (LAB) that produces several chemical reactions. As the dried starter gets refreshed with water and fresh flour, the yeast and natural bacteria produce CO2 gas which makes the bread rise. Since we will be baking simultaneously in different environments, we need to control the temperature, humidity and other variables as much as possible. For the best results, please adhere to the timing below. As you rehydrate your starter, each day look at your starter for “bubbling and doubling” and smell it-as it comes back to life it will become bubbly and take on a yeasty, slightly sweet smell. You will need a lidded Dutch Oven (at least 5 Qt) to bake the bread in, if you don’t have one, please ask a friend, family member or neighbor to borrow theirs. (You’ll only need it for 1 hour on bake day.) It needs to withstand 500 ° F heat.

The Recipe arrives with your kit.  However, we have copied what you will get in the kit, and what you must provide.

Your kit contains:

1 small tub/bottle containing dried/dehydrated sourdough starter

1 small zippered bag of flour to rehydrate your starter (Days 1-3)

1 large zippered bag of flour (Day 4)

1 small rubber banded zippered bag of Rye flour

1 sheet of parchment paper which you will cut later to fit inside your Dutch Oven

1 plastic container,

1 plastic bag

1 bench scraper

1 tea towel to wrap your bread in

You will need:

Measuring cups (use for dry ingredients) and Measuring Spoons (use for dry ingredients)

Liquid measuring cup (for water)

A 5 Qt or larger lidded Dutch oven

A sheet pan that is larger than the Dutch Oven (the bread will bake in the Dutch Oven on the sheet pan)

Salt

Lukewarm tap water

1 large mixing bowl

1 sheet of aluminum foil

The Last Flight by Julie Clark

(Virtual Program)

Monday, October 4 at 7 PM EST

Join us on October 4 at 7:00 p.m. as we discuss The Last Flight by Julie Clark. Two women meet in an airport, both alone, both scared, and both urgently needing an escape from their lives. Claire Cook has a husband whose temper burns as bright as his promising political career, and she has worked for months on a plan to get out. A chance meeting in an airport bar brings her together with a stranger equally as desperate. Together they hatch a plan to switch tickets – Claire taking Eva’s flight to Oakland, and Eva traveling to Puerto Rico as Claire. But then one plane crashes, and it’s clear that one of them wasn’t telling the truth.

There are 100 spaces available.
